💡 Tips before you go

• Hire (ヒレ) = tenderloin (lean). Rosu (ロース) = loin (fattier, more flavor). If in doubt, go rosu.
• Grind the sesame seeds in the mortar they give you, then pour sauce in. This is the proper way.
• The shredded cabbage usually has unlimited refills. Use it.
• Try a piece with just salt first to taste the pork before adding sauce.
